It depends on the site. Within one warehouse a cold room behaves differently from a dry area, so the decision comes from pilot measurement rather than a catalog.

Would this mean tracking employees?

Not unless the design allows it. The link between asset and person is deliberately separated; establishing that link is a separate decision and creates a privacy notice obligation.

How often do tag batteries need changing?

Update frequency drives battery life directly. A design asking for a position every second carries several times the maintenance load of one asking every minute; that balance is set at the start.
